This soup can also be used as a salad dressing.

Ingredients
- 2 ears of corn
- 1 avocado
- 1/4 cup of water
- 1/4 cup of olive oil
- Tablespoon of apple cider vinegar
- Handful of pre-sliced onion
- Clove of garlic
- Handful of cherry tomatoes
- Dash of cayenne pepper
- Dash of cumin
- Dash of sea salt

Approximate serving size
- 2 bowls of soup or dressing for 2 salads

Machine use
- Vita-Mix or Food Processor

Directions
- Cut corn kernels from cob and add to Vita-Mix.
- Cut and pit avocado. Scoop out inside and add to Vita-Mix.
- Add water, oil and apple cider vinegar. Blend on low.
- Add rest of the ingredients and blend on high until smooth.
