Avocado and Corn Soup

This soup can also be used as a salad dressing.

    Ingredients

  • 2 ears of corn
  • 1 avocado
  • 1/4 cup of water
  • 1/4 cup of olive oil
  • Tablespoon of apple cider vinegar
  • Handful of pre-sliced onion
  • Clove of garlic
  • Handful of cherry tomatoes
  • Dash of cayenne pepper
  • Dash of cumin
  • Dash of sea salt
    Approximate serving size

  • 2 bowls of soup or dressing for 2 salads
    Machine use

  • Vita-Mix or Food Processor
    Directions

  • Cut corn kernels from cob and add to Vita-Mix.
  • Cut and pit avocado. Scoop out inside and add to Vita-Mix.
  • Add water, oil and apple cider vinegar. Blend on low.
  • Add rest of the ingredients and blend on high until smooth.
