Kale, Red Leaf, Cherry Tomato and Onion Salad

    Ingredients

  • 1 head of kale
  • 1 head of red leaf lettuce
  • Handful of cherry tomatoes
  • Handful of pre-sliced onions
  • 4-6 sun dried tomatoes soaked in water for at least 20 minutes
  • 1 teaspoon of olive oil
  • Dash of sea salt
  • Avocado and corn dressing (requires Vita-Mix or food processor)
    Approximate serving size

  • 1 huge salad
    Machine use

  • None for salad. Vita-Mix or food processor for dressing.
    Directions

  • Drain off sundried tomatoes and set aside.
  • Tear leaves off of kale and throw into salad bowl.
  • Massage down with a pinch of salt and olive oil.
  • Chop up red leaf lettuce and add.
  • Top with avocado and corn dressing.
  • Top with cherry tomatoes, onions and sundried tomatoes.
  • Toss to combine.
