Corn and Dill Salad

    Ingredients

  • 2 ears of corn
  • Cherry tomatoes
  • Pre-shredded onion
  • Handful of dill
  • Bed of greens
  • 1/4 cup of olive oil
  • 1/2 lemon
  • Dash of agave nectar
    Approximate serving size

  • 1 big salad

  • Cut corn kernels off cob and place into a bowl.
  • Add tomatoes and onions.
  • Rip up dill and put over corn, tomatoes and onions.
  • Pour olive oil and agave over mixture.
  • Squeeze lemon on top.
  • Mix to thoroughly coat.
  • Serve over bed of greens.
