This can be used in a variety of ways. If you dehydrate, you can place it in a wrap on crackers. If you don’t dehydrate it, can put it on a bed of greens.

Ingredients
- 4-5 tomatoes
- Pre-shredded onions
- 2-3 red peppers
- 1 chili pepper
- Tablespoon of cumin
- Teaspoon of coriander
- Tablespoon of olive oil
- Splash of apple cider vinegar
- Dash of sea salt

- 1 large serving

Machine use
- Vita-Mix or Food Processor. Dehydrator is optional.

Directions
- Cut up 2-3 of the tomatoes into large chunks and place in large bowl.
- Cut up peppers and place in bowl with tomatoes.
- Add onions to bow as well. Set bowl aside.
- Chop up rest of tomatoes and hot peppers. Throw into Vita-Mix.
- Dump in rest of ingredients.
- Blend down until smooth.
- Pour onto vegetables.
- Mix up and let marinate at room temperature.
- Optional: Spread onto teflex sheet on dehydrator tray at 110 degrees for 4-6 hours.
