Spicy Tomato, Pepper and Onions

This can be used in a variety of ways. If you dehydrate, you can place it in a wrap on crackers. If you don’t dehydrate it, can put it on a bed of greens.

    Ingredients

  • 4-5 tomatoes
  • Pre-shredded onions
  • 2-3 red peppers
  • 1 chili pepper
  • Tablespoon of cumin
  • Teaspoon of coriander
  • Tablespoon of olive oil
  • Splash of apple cider vinegar
  • Dash of sea salt
    Approximate serving size

  • 1 large serving
    Machine use

  • Vita-Mix or Food Processor. Dehydrator is optional.
    Directions

  • Cut up 2-3 of the tomatoes into large chunks and place in large bowl.
  • Cut up peppers and place in bowl with tomatoes.
  • Add onions to bow as well. Set bowl aside.
  • Chop up rest of tomatoes and hot peppers. Throw into Vita-Mix.
  • Dump in rest of ingredients.
  • Blend down until smooth.
  • Pour onto vegetables.
  • Mix up and let marinate at room temperature.
  • Optional: Spread onto teflex sheet on dehydrator tray at 110 degrees for 4-6 hours.
