Cauliflower, Mushrooms and Onions Marinated in Garlic Fig Dressing

    Ingredients for Garlic Fig Dressing

  • 4-6 figs soaked in water overnight
  • 2 cloves of garlic
  • 1 teaspoon of apple cider vinegar
  • Ingredients for Veggies

  • Head of cauliflower
  • 1 package of mushrooms
  • Handful of pre-shredded red onions
    Approximate serving size

  • 1 large salad
    Machine use

  • Vita-Mix or Food Processor
    Directions

  • Follow directions for garlic and fig dressing.
  • Chop up cauliflower, mushrooms and toss into large bowl with onions.
  • Pour on dressing and toss to coat.
  • Let marinate for 4-6 hours or overnight in the fridge.
