- 1 celeriac root
- 2 handful of pre-shredded onions
- 2 apples
- Handful of soaked raisins
- Leeks
- 1/4 cup or so of olive oil
- 1 teaspoon apple cider vinegar
- 1 teaspoon of nama shoyu
- 1 teaspoon of agave nectar
- Clove of garlic
- Small piece of fresh ginger
- Optional: 2 tablespoons of nutritional yeast

- Vita-Mix and/or food processor

Directions
- Cut skin off celeriac and cut into chunks.
- Shred in food processor or using a mandolin.
- Add shredded celeriac to large bowl with onions.
- Shred up apples and add to bowl.
- Add olive oil, apple cider vinegar, nama shoyu, agave nectar, garlic, ginger and nutritional yeast to Vita-Mix or food processor.
- Blend until smooth and pour on top of salad.
- Toss and let marinate for a few hours.
- Serve atop a fresh bed of greens.
- Top with raisins and cut scallions.
