Kale, Mushroom, Tomato and Onion Salad

    Ingredients

  • 1 head of kale
  • Bunch of portobello mushrooms
  • 1 tomato
  • Handful of pre-shredded onions
  • Dash of sea salt
  • Teaspoon of olive oil
  • Half of a lemon
  • Splash of agave nectar
    Approximate serving size

  • 1 large salad

    Directions

  • Pull kale leaves from stem and add to bowl.
  • Sprinkle sea salt on to kale.
  • Massage down with hands to break down the kale. It should soften after about a minute or so.
  • Add the olive oil if you need to.
  • Chop up mushrooms, tomatoes and onions and add to kale.
  • Pour olive oil, agave and squeeze of lemon onto salad.
  • Toss together.
