Massaged Kale Salad With Tomato, Onions, Cumin, Coriander and Cayenne

    Ingredients

  • 1 head of kale
  • 1 tomato
  • Handful of pre-shredded onions
  • Half lemon
  • 2 tablespoons of olive oil
  • Splash of agave nectar
  • Dash each of cumin, coriander and cayenne.
  • Handful of sunflower seeds
  • Sprinkle of sea salt
    Approximate serving size

  • 1 large salad

    Directions

  • Pull kale leaves from stems and place in salad bowl.
  • Sprinkle with sea salt and massage down with hand until tender and wilted.
  • Cut up tomatoes and add with onions.
  • Pour olive oil on top.
  • Squeeze lemon and add agave nectar.
  • Mix well.
  • Sprinkle with cumin, coriander, cayenne and sunflower seeds.
