Collards, Bok Choy, Arugula, Apple, Raisin and Onion Salad

    Ingredients

  • 4 collard green leaves
  • 4 stalks of bok choy
  • 1/2 head of arugula
  • 1 apple of your choice
  • 1 handful of raisins
  • Pre-shredded onions
  • 2 tablespoons of olive oil
  • 1/2 lemon
  • Sprinkle of sea salt

  • Finely cut the collards, bok choy and arugula.
  • Toss into bowl.
  • Dice up apples and add to bowl with raisins and onions.
  • Top with olive oil, squeeze of lemon and dash of sea salt.
