Kale and Lettuce Salad With Sunflower, Red Pepper Dressing

    Ingredients

  • 5-6 kale leaves
  • 5-6 lettuce leaves
  • 1 red pepper
  • 1/4 cup of sunflower seeds
  • 1 clove of garlic
  • Splash of apple cider vinegar
  • Dash of sea salt
  • Tablespoon of water
  • 3-4 sun-dried tomatoes soaked for 20-30 mins or until soft.
    Approximate serving size

  • 1 medium salad
    Machine use

  • Vita-Mix or Food Processor
    Directions

  • Remove kale leaves from stems and add to salad bowl.
  • Sprinkle with sea salt and massage down until wilted.
  • Chop up lettuce and add to bowl with kale.
  • Add red pepper, sunflower seeds, garlic, water and squeezed lemon to Vita-Mix or food processor.
  • Mix until desired consistency. Add more water if needed.
  • Pour on top of salad.
  • Cut up sun dried tomatoes and top the salad.
