Vegan Gas Station Food Challenge!

Does traveling as a vegan sound challenging? Do you wonder what vegans can eat on the go? During my recent move I decided to challenge myself and see what vegan food I could find in a random gas station in the middle of “Podunk” Florida. Hopefully this will help show that it’s not that difficult to find vegan food- even on the run. Links to all products below! **PLEASE NOTE- Funyuns are NOT vegan but several Funyun knockoffs like “Onyums” are! Also the Crab Chips have honey- my bad, guys!**

Great Raw Dessert Cooking Lesson

Raw Cooking Class

Here is a a great raw cake recipe from the Trupp Cooking school; Orange and nut cake with Figs.

It very easy to make and not only is eat delicious but of course its RAW!

Here is the recipe:
Orange and nut cake with Figs
(one 9-inch cake tin)

1 cup of desiccated coconut
3 heaped tablespoons of cacao powder
3 soft dates (stones removed)
1 tablespoon of coconut oil

Zest and juice of 3 oranges
2/3 of a cup of honey
3 cups of cashew nut (soaked overnight)
1/4 vanilla bean
1 cup of melted coconut oil

To garnish:
1/4 cup crushed pistachio nuts
3 fresh figs cut into halves
a few edible flowers

Place all the ingredients for the crust into a blender bowl
Bend together until sticky
Transfer it to a cake tin and then press it down firmly especially at the edges.
Place all the filling ingredients into the blender then precess for 3 minutes.
Then pour it on to the cake.
Then place it into the fridge for approximately 6 hours.
Take it out and heat the cake ring with a flame burner.
Remove it and then garnish it with some pistachio nuts, fresh figs cut in half and edible flowers. If you don’t have any figs then you could top them with orange slices.

How easy is that? If you like that and you live in Melbourne I know they run cooking classes throughout the year, and one cooking course is on healthy and wholesome salads which is held later in the year. The other course that maybe of interest to many is; ‘The Lost Art of Fermentation”, which shows how to ferment your raw foods.

I remember the first time I went to an organic orchard. I was in my twenties and went to visit my friend Nick who had recently bought the farm from Jack Powell. Jack’s father had established the farm in the 1920’s, apple and pear trees that were planted then were still be producing fruit. As we walked through the orchard I picked a cox orange pippin apple off a 80 year old tree and took I bite. I’ll never forget that moment, the favour of the apple was so complex, vibrant, I realise that this is was the taste I had never experienced before the taste fresh raw food.

Raw foods is the beginning of all things, and it can connect you to those moments, as I was at Nick’s orchard.

Yet for many the idea of eating raw foods may seem bland or boring, and limiting in the choices, this couldn’t be further from the truth. Not only is there diversity in how raw foods can be eaten whether its juicing, fermented, dehydrated or sprouted the choices of what endless. The favours can be as complex and as simple as you’d like.

This Raw Food movement is even being embraced by the top chefs in the world through the Cook It Raw events. This group of avant-grande chefs explore the possibilities of cooking and preparing foods from a local region where they are encouraged to forage, harvest, and engage with the local community.

Its this connection with what we eat and our environment that is so much a part of what we have come to know through preparing and eating raw foods. So no matter how you come to deciding to try raw foods, whether it is to lose weight, detox, or just wanting to feel more energetic you will find there will be something to celebrate and embrace in this food.
