FULLYRAW JELLY DONUTS WITH COCONUT CREAM ICING
Donut peaches or nectarines
5-6 ripe figs (I’m using candy stripe)
Meat from 1-2 young coconuts
1 cup coconut water
3+ pitted dates
Less than a quarter cup of raw cashews (optional)
Pinch of vanilla bean
Zest from a lemon, lime, orange, and beet
Directions for Assembly:
Slice your donut peaches in half and core out the seed.
Spoon out the jelly filling from your figs, and spread this filling into/on your peach donut.
Press both ends of your peach donut together and let the jelly smush out the sides.
For the Coconut Cream Icing:
Blend your young coconut meat, coconut water, dates, cashews (optional), and vanilla in a high speed blender like a Vitamix.
Either using a spatula or a piping bag, spread your icing on top of your donut.
Sprinkle your lime, lemon, orange, and beet zest on top of your donuts.
Take a huge bite and enjoy!
